This past Valentine’s Day, we celebrated by making some delicious and nutritious treats with Lili Hanft, FNTP. These decadent chocolate truffles are gluten, dairy, and refined sugar-free and include a surprise ingredient: sweet potatoes!

They're healthy AND delicious, and include an unusual ingredient.
Ingredients:
- 1/2 c. (4oz) steamed or baked sweet potato, mashed
- 6 Tbsp (3oz) coconut butter*
- 5 Tbsp (1oz) Dutch processed cocoa powder
- 4 large (2oz) medjool dates, chopped
- 1 tsp vanilla extract
- pinch of salt
Makes 16 truffles
*Also called coconut manna or creamed coconut. Can also be made by blending unsweetened shredded coconut in the food processor until it turns creamy.
Instructions:
- Blend all ingredients in a food processor until smooth.
- Roll into balls and chill in the fridge.
- Take them out later and enjoy!
