Are you experiencing a winter slump? Winter in New Hampshire can do that to you. Freezing cold days and long nights just make me want to curl up on the couch with a warm blanket and a nice bowl of broccoli alfredo. And don’t get me wrong, I love me some cheesy goodness, but I think I’ve been in a comfort food coma since Thanksgiving and it’s time to lighten things up a bit. If this sounds like you as well, try breaking the cycle with some of these vibrant recipes. It might be dreary outside, but these dishes are sure to brighten up your day!

Grapefruit, Spinach, & Edamame Salad

This salad is as powerhouse. Chock-full of vitamins and minerals (and 13g of vegetable protein per serving!) to help drag you out of the doldrums. Try something new and make this tangy treat, with sparkling grapefruit sections, crunchy edamame, and creamy avocado.

Chipotle-Lime Chicken and Veggie Soup

Break out of your rut and warm things up with this amazingly flavorful soup! For a vegan-friendly version, use vegetable stock in place of chicken stock and add an extra can of beans in place of the chicken. Feeding a crowd? Creamy Carrot and Coconut Milk Soup with Thai Red Curry

A delicious and satisfyingly meal for vegetarians, vegans, and meat eaters alike! Spicy, seasoned lentils star in these simple, satisfying tacos. Set up a taco bar with all the fixings and let your family (or guests) make their own. You can add hard taco shells or a meat-based filling as options, too.

Spicy Banana Habanero Salsa
